Our last purchase ‘Life in Balance’ by Donna Hay in an Italian translation inspires the Friday night dinner.
For 2p cut 1 big or 2 smaller cucumbers in thin slices. Add 1 chopped garlic clove, 1 small spicy pepper in tiny slices, 2 teaspoons of mirin, juice of 1 lime, a pinch of salt and 1 table spoon of chopped cilantro (luckely we still have some left in the freezer). Marinate in the fridge. Before serving add some fresh young spinach leaves.
Bake 2 salmon filets (150-200 grams each) shortly after they have been wallowed first in 1 beaten egg and then into dukkah. Dukkah is an Egyptian condiment which you can buy ready made, but if you prefer to use your own ground mixture use then at least hazelnut, sesame, coriander, cumin, salt and pepper.
