Yes, I love food, I love afternoon tea time, but I prefer to keep it as healthy, as balanced as possible.
Personally, the following recipe is absolutely amazing. I did some research, some experiments, and this is the end result.
Mix 100 grams of oatmeal flour, 100 grams of almond flour, 1 teaspoon of baking powder, 1 pinch of salt. Add 4 large or 5 smaller eggs, 500 grams of ricotta, some vanilla flavor and the zeste of 1 untreated lemon. Mix everything.
Now it’s time to add some sweetness: I use often the liquid artificial sweetener or I combine with 1 or 2 table spoons of maple syrup. I really would advise to taste the mixture. Often a cake says 150-200 grams of sugar, which is really sweet. I probably end with the equivalent of 70 grams max.
Chop a total weight of approximately 800-900 grams of summer fruits ( apricots, peaches, blueberries, nectarines, pears, …) in small pieces. Add to the dough. Mix gently.
Preheat the oven at 180°.
Grease a springform of 23-24 cm. Spread baking paper. Grease the baking paper. Spread the mixture. If you want a more elegant version, you can finish with almond flakes.
Bake the cake for approximately 40-45 minutes.
