Another top recipe for a campervan stove.

We crossed the border between Romania and Bulgaria. After a whole day of visiting Bucharest we decided to leave the city and country on a Sunday evening instead of waiting until tomorrow morning. We arrived at our camping spot at 10pm whithout even thinking about our dinner.

As a prepared cook I always have some ingredients for an emergency meal. What do you think of a simple pasta arrabbiata seasoned with a secret Romanian ingredient which we received as a welcome drink, a homemade famous Romanian liquor Palinca,  a few days ago. The welcome drink ended in my storage for a better occasion 😉 ( I’m not into strong liquor), knowing it has a rich fruity flavor.

Chop and fry 1 red onion, 3 chilies this time and 4 garlic cloves in a drizzle of olive oil. Stir and fry. Add 160 grams of dried pasta. Stir. Add the liquor ( probably almost 70-80 ml. Allow to evaporate ( what a smell🤩). Add 1 table spoon of dried basil and 1 teaspoon of dried thyme. Stir and continue to simmer. Add 500 ml of a thick passata. Add 500 ml of water and 1 cube of good quality chicken stock. Stir regularly. Close the lid. Continue to simmer until the pasta is al dente.

Finish with fresh basil and grated parmesan.

Easy meal with maximum flavor on a rainy Sunday night in a campervan somewhere in Europe.
