We had an amazing day in Bohuslän, the western coastal region. The landscape is amazing, the weather ideal ( sunny, and around 20-21 degrees).
Walking through Fjallbäcka we even found a fish shop, so our proteins were decided.
Nothing better than a side dish with green asparagus, tomatoes and spring onions.
Chop and fry 4 garlic cloves, 1 red onion, 1 chili in a drizzle of olive oil. Add a few stems of fresh rosemary ( yes, my herbal garden is still partially alive 😀).
Clean 400 grams of green asparagus. Remove the green part of a bunch of spring onions. Chop the green parts and set aside. Cut 3 tomatoes in smaller portions.
Add the asparagus, spring onions and tomatoes to the pan. Season with pepper and salt. Bake and stir until al dente. Finish with the chopped green parts of the spring onion.
Enjoy the amazing fish and the side dish.
