We are still in the North of Germany, in the province Schleswig-Holstein. The weather is unpredictable, but, thanks to the planning skills of my dear wife, we enjoy nice dry walks in the lucious green woods around the many lakes and fjords and strolls in the cosy historical areas. We spend cosy moments in the campervan while the rain is ticking on the roof.
Iris requested a pasta dish with a cheesy sauce tonight. I bought 500 grams of mushrooms and 1 white onion to reach our vegetable quotum( we have mixed salad for lunch and fruit in the morning).
Boil 150 grams of whole wheat pasta in salted water until al dente. Drain and keep 1/2 of a cup of the boiling water. Chop and fry 4 garlic cloves and 1 white onion in a table spoon of butter and a little drizzle of olive oil. Fry and stir. Add the chopped mushrooms. Bake and stir constantly. If too dry, add the pasta water. Add 2 teaspoons of dried thyme and the zeste of 1 untreated lemon. Add 500 ml of semi skimmed milk in smaller portions while stirring carefully. Allow to simmer. Add pepper and 1 cube of good quality chicken stock. I notice the sauce isn’t thickening enough, and so it will be, because the flavor is good. Add the pasta and some lemon juice. Season with extra pepper and salt if needed. Finish with 80 grams of grated mature cheddar cheese ( which was waiting for a recipe).
