Easy vegetarian curry recipes

I brought some curry paste and coconut milk on our ‘rehearsel’trip. Any kind of curry paste will work, but I personally prefer red curry paste or massaman curry paste.

Chop 4 garlic cloves ( this remains the best base for any docV recipe🙃), 1 red onion and a piece of ginger ( 4cm). Fry in a drizzle of olive oil. Add 3 sliced sweet bell peppers. Fry and stir regularly for 10 minutes. Add 500 grams of chopped green asparagus and 1 large table spoon of the curry paste. Fry and stir. Add 250 ml of coconut milk and 250 grams of halved cherry tomatoes. Allow to simmer and stir now and again. Once the vegetables are ready ( your decision), stop the fire.

Boil 120 grams of basmati rice in the meantime : heat the rice with 1 1/2 amount of salted water; allow to cook for a few minutes; to save energy, stop the fire and put a sheet of kitchen paper between the pan and the lid; allow to rest for approximately 15 minutes. The rice will be perfectly al dente.

Mix the rice with the curry. Finish with fresh basil. Serve.
