New adventures ahead

It’s been awhile since I have been posting. As some of you know already, we will soon leave for a roadtrip in a campervan to the North of Europe. This implies a completely different way of life and a different way of cooking : I will have no oven, no kitchen filled with lots of equipment and we will have  less personal space🙃. Last week we had our first rehearsal, hoping to get familiar with the technical aspects of Gloria, our house on wheels for a few months. We have no experience at all, so some people might think we are a bit crazy, which is understandable. Anyway, I can reassure you, the try out went really good, so I thought it would be a great opportunity to share my first recipes.

For this easy all in one dish, chop 4 garlic cloves. Fry in a little drizzle of olive oil. Add 500 grams of halved cherry tomatoes, 1 teaspoon of dried basil, salt and lots of pepper. Allow to simmer for approximately 10 minutes. Add 500 grams of ready made gnocchi and 2 table spoons of ready-made good quality classical basil pesto. Stir regularly. Once the gnocchi are ready, spread 200 grams of mozzarella di Buffalo. Allow to simmer a little bit longer. Finish with fresh basil ( I forgot to mention, thanks to the idea of our amazing friend Leen, I decided to install a small garden with fresh herbs  in Gloria).
