A few days before people are arriving I ask for a wish list for breakfast and dinner. Ingrid and Guido will be here in approximately 5h. Time enough to prepare a simple fennel soup, fresh bread and a stew with polpo.
Boil 1,5 kilo of frozen polpo for 1h in plain water. Chop 1 large red onion, 4 garlic cloves,1 chili and 1 kilo of sweet bell pepper. Put everything in a large oven dish. Add 2 table spoons of olive oil, 1 table spoon of cumin seeds, 1 teaspoon of coriander seeds. Bake in the oven at 200° for 20 minutes. Stir. Add 200 ml of white wine. Put back in the oven for another 20 minutes. Stir halfway.
Drain the octopus and cut in large pieces. Spread in the oven dish. Pour 2 cans of cherry tomatoes on the octopus. Season with salt and 1 table spoon of dried oregano. Add 200 ml of water ( to rinse the cans). Stop the oven. Put the oven dish back in the oven. The preparation is done, time enough to intensify the flavor.
Reheat the oven at 200 ° 30 minutes before dinner. Taste the sauce. Season with pepper and salt. Finish with fresh coriander or parsley. Serve with moghrabie or farro.
