Local saffron and local gnocchi

Saffron from the Tuscan hills nearby (Rapolano Terme) has an incredible delicate smell and flavor. The following recipe does justice to this fantastic ingredient.

Add 1 large pinch of saffron to 125 ml of light cream. Mix.

Chop and fry 4 garlic cloves, 1 chili and 600 grams chopped courgettes in 1 table spoon of olive oil until crispy. Season with pepper and salt. Add the cream and stir. Add 125 ml of water.

Boil 400 grams of ready made gnocchi in salted water until appearing at the surface. Remove from the pan. Add to the creamy courgettes. Taste, add extra pepper and salt if needed.

Finish with fresh parsley.

So easy, so delicate, so yummy.
