Vegetarian balls in a green soup

Diane, one of my dear friends has moved to our village. Finally I could help her a bit in reorganizing her new place while our dogs are having a great time together. This lunch seems perfect, heatable in the microwave and creating, especially to Diane, a little break on one of her lovely terraces.

Chop and fry 4 garlic cloves, 1 chili and 1 leek in a little drizzle of olive oil. Stir. After a few minutes, add 600 grams of frozen peas and 1 table spoon of dried basil. Stir regularly. Add 1,3 liter of vegetable stock ( made with ready made powder). Allow to simmer for approximately 15 minutes. Cool down. Blend. Taste, add pepper and salt. Store in the fridge.

For the vegetarian balls, mix 100 grams of grated parmesan with 150 grams of farro flour, 2 small eggs, a handful of chopped parsley, pepper and salt. Oil your hands. Create small balls of +/- 2,5-3 cm. Put on oiled baking paper. Bake in the oven at 200° for 20-30 minutes. Stir halfway.

Add the balls to the soup. Reheat as lunch or starter or whenever you want.
