Onions, pear and gorgonzola dolce in a ‘tarte tatin’

Puff pastry is not on the list of ‘healthy food’ but it’s so delicious. I always loved quiches, but if you prepare a quiche for 2p you don’t want to know how many kcal you’ve eaten, unless you can stop after 1/4 😉. A tarte tatin can contain the same ingredients but without cream or eggs.

Slice 1 red onion, 1 pink, 1 white and 2 shallots. Spread on baking paper which on itself is spread in a large quiche form. Spread 20 grams of butter. Bake in the oven at 200° for 30 mins. Stir halfway. Cut 2 peeled pears in wedges. Mix the with 1 table spoon of dried thyme and 2 table spoons of white balsamic vinegar. Stir the onions. Season with 4 chopped garlic cloves, pepper and salt. Spread the pears and vinegar and thyme. Bake for another 20 minutes. Stir gently and try to keep the equal spreading.

Cover with a ready made pastry. Make a small hole in the middle. Bake in the oven at 180° for 20 mins. Turn the tarte tatin gently. Spread 200 grams of gorgonzola dolce. Put back in the oven for another 10 minutes, until the cheese has melted.
