I have this awesome new cookbook of Donna Hay ‘everyday fresh meals in minutes’. Today I really need something quick but still, healthy and fresh. I mix a few ideas with a few elegant ready made preparations.For 2p, remove skin and bones of 450 grams of fresh salmon. Slice 4 garlic cloves and put in an oven dish. Add 4 table spoons of ready made teriyaki. Spread the salmon and turn a few times. Store in the fridge. Turn regularly. Slice 1 cucumber. Mix with 2 table spoons of ready made seasoning for sushi rice. Store in the fridge and stir now and again.Slice 500 grams of readymade boiled beetroot. Mix with 2 table spoons of ready made seasoning for sushi rice. Store in the fridge and stir now and again.Spread 100 grams of baby spinach on a large plate. Slice 2 carrots with a potato peeler. Spread on the spinach.Slice 1 chili. Spread on the salmon. Spread 2 table spoons of nori( seaweed) flakes. Turn once more. Bake in a preheated oven at 200° for 5-10 min maximum.Serve everything together. Finish the salad with a drizzle of sesame oil and some toasted sesame seeds.
So easy and super delicious.PS Don’t be afraid to use ready made ingredients. It’s important to know what kind of flavor they add.
What a beautiful creation! Toasted seeds, even though tiny, add such lovely crunch to a dish.
