The September edition of delicious.nl is dedicated to Yotam Ottolenghi. Janneke Philippi seems to know what his favorite recipes are. One of them is a fish taco with salad, mango and lime yogurt. Although we are just the 2 of us (remember: quarantine 😏), I decided at least the same amount of ingredients as for 4p.
Chop 2 mangos in cubes. Mix with 1/2 of a chopped fresh chili, 1 chopped shallot, salt and the juice of 1/2 of a lime. Store in the fridge.
Slice a small romana salad. Mix with a small can of drained corn seeds, chopped fresh parsley (should be coriander). Store in the fridge.
Mix 150 grams of Greek low fat yogurt with the zeste of 1 lime, 1 chopped garlic clove and salt. Store in the fridge.
Chop 400 grams of white fish (no bones and no skin) in cubes. Mix with 1/2 of a teaspoon of chipotle powder, a drizzle of honey, a drizzle of olive oil and some salt. Store in the fridge.
Heat a pan. Chop and fry 3 garlic cloves, 1/2 of a chopped chili and 1 teaspoon of cumin seeds. After a few minutes, add the fish and bake.
Heat piadini ( instead of taco) in a pan. Spread a dressing based on lime juice, olive oil and some honey on the salad.
Serve everything together.
Sounds delicious! But I would use the parsley, being one of those folks who has a strong aversion to fresh coriander!
