I’m back home after a few lovely days in Belgium. While staying at my youngest brother’s home I went to Antwerp to see my daughters, saw my mother on 3 different moments, ate some North Sea shrimps, Thai food and enjoyed a superb Sunday evening dinner at Trattoria Bazalia. You can imagine that a obligatory quarantine is worth the price.
Clean and chop 600 grams of carrots, 1 small cauliflower, 4 garlic cloves, 4 small fresh onions and 1 chili. Spread on baking paper on an oven dish. Season with 1 table spoon of curry powder, 1 table spoon of dried thyme. Spread some olive oil and mix. Bake in the oven at 180° for 20 mins. Stir. Spread some fresh thyme. Bake for another 20 minutes. Taste, season with pepper and salt. Serve with sausage or a vegetarian alternative.
