Sami Tamimi and Tara Wigley have written a beautiful story about Palestina in ‘Falastin’. We had planned a nice trip to Jerusalem and Tel Aviv end of August, but we decided a few months ago to cancel it for obvious reasons.
Thanks to my cookbooks, we can continue travelling, on our plate.
Labaniet alzahar is a creamy risotto. My version is less creamy, although creamy enough.
Clean and chop 1small cauliflower for 2p ( greens included). Spread on baking paper on an oven tray. Mix with a drizzle of olive oil, cumin seeds, pepper and salt. Roast in the oven at 200° for 30 mins. Stir halfway and add 4 sliced garlic cloves.
Put 100 grams risotto rice in a pan. Add 350 ml of semi skimmed milk, pepper, salt, a few bay leaves and 1 teaspoon of crushed coriander seeds. Allow to simmer for approximately 20 mins. Stir now and again. Mix 170 grams of low fat Greek yogurt with 1/2 of a teaspoon of corn starch and 1 egg thoroughly. Add the yogurt mixture to the pan after 20 mins of simmering. Stir and continue the simmering for 5 more minutes ( stir the fire if the rice is ready).
Serve the rice with the roasted cauliflower and fresh parsley. Finish with a drizzle of olive oil. Real comfort food.
