Vegetarian involtini

Cut 2 eggplants in long slices of +/_0.5 cm. Brush some olive oil on each side and grill them.Prepare a simple tomatoe sauce with 500 ml of passata, 2 garlic cloves, 1 red onion, dried basil, 1 chili and some olive oil balsamic vinegar, pepper and salt.Mix 100 grams of fresh white cheese with 2 table spoons of almond flour, 2 chopped garlic cloves, 2 chopped spring onions, 2 teaspoons of dried oregano, 1 table spoon of chopped rinsed capres, 1 egg , some cinnamon powder and lots of black pepper.Put a spoonful of the mixture on an eggplant slice and create involtini( rolls). Put the in an oven dish. Spread the tomato sauce. Finish with 100 grams of crumbled white cheese and some dried oregano. Bake in the oven at 180° for 25-30 mins. Serve with a green salad.Buon appetito.
