It’s all about organization, which for a lot of fans is one of my strongest qualities. What do I store in my small freezer : some fish as shrimps, salmon, vongole and squid, frozen fresh herbs, home made stock, curry paste, puff pastry and fresh peas. Now and again I will put some cheese leftovers or ready made soup or fresh pasta in the freezer, to avoid wasting. If I find some fresh sardines, perfectly cleaned, I often buy them to put in the freezer. Knowing that we can only shop in the local supermarkets where there is no fresh fish, I’m pleased to find a portion in our freezer.Wash a portion of small potatoes. Dry and cut in wedges. Put in an oiled dish. Spread a drizzle of olive and some ghee, some dried basil, pepper and salt. Bake in the oven at 180° for 20 mins. Stir and add 750 grams of chopped courgettes, 4 chopped garlic cloves. Put back in the oven for another 15-20mins. Stir. Add pepper and salt. Once almost ready, spread 300 grams of cleaned sardines (recipe for 2p), a lemon chopped in wedges and 2 table spoons of chopped fresh basil. Put back in the oven for 15mins. Finish with fresh basil. Buon appetito.
