I’ m a big fan of Jamie Oliver as you know. While I run on the treadmill I often watch a cooking program on YouTube. Jamie Oliver and Gordon Ramsey are my favorites.
‘Tiella di riso al forno’ is a wonderful dish to prepare in advance for 6 persons.
Clean a mixture of mussels and vongole, 2 kilo of mussels and 1 kilo of vongole. Heat a pan. Add a drizzle of olive oil. Add the shells. Add 400 ml of prosecco. Once the shells are opening, stop the fire. Drain and keep the liquid. Remove the mussels and vongole from their shells.
Clean 300 grams of potatoes. Chop in small cubes. Put in an oiled large oven dish. Chop 1 onion, 6 garlic cloves, 2 stems of celery and 1 chili. Cut 500 grams of cherry tomatoes in quarters. Chop a bunch of fresh parsley. Put everything in the oven dish. Keep some of the parsley as finishing touch. Grate 60 grams of parmigiano. Put half of it in the oven dish. Add 300 grams of basmati rice. Mix with the sea fruit. Add pepper and salt. Slice 2 medium sized courgettes in slices of 0.5 cm. Pour the liquid into the oven dish. Spread the courgettes as top layer. Finish with the parmigiano.
Wait for your guests. 1 hour of oven time at 180° is enough to have al dente rice. Cover if the upper layer would become to dark but allow evaporation.
Finish with some fresh parsley.
