Sunny quiche

Use turmeric in your dough to creatie a summer dish!

For a rectangular quiche for 2-3p, mix 200grams of flour ( spelt or normal) with 2 teaspoons of turmeric powder, a pinch of salt, 2 table spoons of olive oil and luke warm water( 100-120ml) until you obtain a smooth dough. Cover with cling film and allow to rest.

Mix 200 grams of cherry tomatoes with some olive oil, dried oregano and 4 chopped garlic cloves. Put on baking paper on a baking tray.

Chop 2 eggplants. Put on baking paper. Spread some olive oil.

Bake both trays in the oven at 180° for 30 mins. Remove the tomatoes. Stir the eggplant and add 2 medium sized chopped courgettes. Bake for another 10-20mins. Taste, and pepper and salt.

Spread the dough on baking paper on a rectangular medium sized oven tray. Spread the vegetables on the dough. Spread 200 grams of stracchino cheese( or buffalo mozzarella).

Bake in the oven at 180° for 30-40mins. Finish with chopped mint.
