Last weekend I planned a short visit to Belgium, to have some quality time with my daughters, my mother and close family.
Lisbet recently moved back to Leuven in a lovely appartement, not bad as Airbnb 😉.
North Sea shrimps are an essential ingredient.
Chop and fry 2 garlic cloves in some olive oil. Add 300 grams of fresh green asparagus . Bake shortly.
Prepare 1 avocado and 1 grape fruit. Chop fresh parsley.
Spread some baby spinach, the asparagus, avocado and grape fruit on a plate. Add some lemon juice, pepper, salt. Spread fresh North Sea shrimps.
Mix 2 table spoons of low fat mayonaise with the fresh parsley. Serve with the delicious salad.
PS it was my birthday, so french fries as extra guilty pleasure 😉.
