My new kitchen is almost ready. Whatever I cook feels like ‘something in between’, although I still appreciate our temporary cooking centre of this awesome house.
Oil a medium sized elegant oven dish. Slice 2 large potatoes thinly. Spread in the oven dish. Slice one large red onion, 4 garlic cloves and 2 large tomatoes thinly. Spread them on the potatoes.
Chop and handful of oregano leaves. Mix with pepper, salt, 1 table spoon of sesame seeds and 150 ml of white wine. Pour the mixture on the vegetables. Cover with aluminium foil. Bake in the oven at 200° for 60 mins approximately.
This dish is a perfect side dish. The following day it will taste even better, I promise you.
Serve with grilled squid, meat, or with some vegetarian substitute.
