I bought 1 kilo of beautiful strawberries. Our dear friends Giancarla and Lucia have a country house in the middle of the spectacular Crete Senesi. The landscape is awesome and especially in this season. A Sunday afternoon tea is a perfect excuse to admire the green waves and to prepare us a strawberry pastry with homemade custard. Put 450 ml of semi skimmed milk in a pan. Add an opened vanilla stick. Start boiling. Stir regularly.
Mix the other 50 ml of the milk with 45 mg of corn starch thoroughly. Batter 2 egg yolks with 100 grams of sugar. Mix with the starch mixture ( no clots allowed! ).
Once the milk boils, remove the vanilla stick ( scrape out the inside first). Add 1/2 of the milk to the sugar mixture and stir carefully. Add that mixture to the milk and, while stirring constantly, reheat the milk. Allow to boil for a few minutes until you obtain the perfect custard.
Cool down in another recipient and cover with cling film to prevent ‘a hard skin’.
Prebake a round puff pastry. Cool down. Spread the custard on the dough. Cover with strawberries. Finish with powder sugar and mintleaves. Ready for the Crete Senesi 😍.
