Salmon is probably one of the easiest fishes to prepare and to combine. The delicate orange/ pink color makes this delightful fish even more attractive.
For 2 p buy a filet with skin of approximately 500 grams. Put the fish on baking paper on a oven tray. Spread pepper, salt and some olive oil. Put the filet with the skin upwards. Make a few incisions in the skin and put fresh rosemary in the incisions.
Preheat the oven at 220°.
In the meanwhile mix the juice of 1 lemon, 1 finely chopped garlic cloves, 3 table spoons of mayonnaise, pepper and salt.
Bake the fish for 10- 20 mins until crispy skin.
Spread baby spinach and dandelion salad on a large plate. Put the salmon on the salad. Finish with the dressing. Perfect dish to combine with oven baked potatoes.
