We stay 1 week in Ravello. The weather is not ideal, but we have a practical appartment with a decent oven. The grocery shops are small, thus there is enough to prepare us a proper and simple dinner.
Chop 750 grams of eggplant in cubes of approximately 2 cm. Put on the oven tray and mix with a drizzle of olive oil. Bake at 200° for 30 mins. Remove the tray from the oven. Stir and mix with 1 chopped onion, 4 chopped garlic cloves, 250 grams of chopped fresh chicken sausage. Put back in the oven and continue the baking. After another 20 mins, stir and add 2 chopped tomatoes, 3 table spoons of fresh rosemary ( being a tourist I always try to spot fresh herbs along the road😉). Bake for another 10 mins. Stop the oven, but leave the food in the oven until rice is ready. Serve all together.
