A bouquet of 5 purple baby artichokes is waiting for an elegant recipe. Remove all three hard outside leaves and the stems. Chop of the top of the artichokes. Slice each one in stripes of approx 0.5 cm. Put immediately in a bowl with water and the juice of 1 lemon until it’s time to finish the recipe. Drain thoroughly. Add the zeste of the lemon. Spread on a plate. Finish with pepper, salt, salted anchovies, a drizzle of olive oil and some balsamic vinegar.
