I’m visiting Rome with one of my daughters, Lisbet. Daily we easily walk 20000 steps. We dine outside or still find energy to cook our own meal.
I prepare one of my oldest recipes ( inspired originally by Nigella Lawson).
Marinate 3 table spoons of raisins in 3 table spoons of balsamic vinegar. Chop and fry 4 garlic cloves in a drizzle of olive oil. Add 750 grams of courgettes and 40 grams of pine nuts. In the meanwhile, boil 200 grams of pasta al dente. Drain and keep 1 cup of the cooking water.
Add the raisins with the marinade to the
vegetables. Taste, add pepper and salt.
Mix pasta and vegetables. Finish with fresh basil and grated parmigiano.
