Our dear Italian friends, Giancarla and Lucia, gave us a small lemon tree which we baptised as Lalu. Lalu is still waiting in our future dining room to be brought outside once the climate is stable enough. The few lemons which were hanging on the plant are falling. I was afraid that they would have been completely dry inside, but no, they are excellent.
For 3p, chop 800 grams of green asparagus and 400 grams of bimi. Steam the vegetables for approximately 4 mins. Drain.
Boil 200- 250 grams of authentic fresh local pici ( today we are hungry😉).
Chop and fry 1 garlic clove, add 60 grams of grinded old bread ( thanks to the mini blender). Bake shortly in olive oil until golden brown. Mix with 2 table spoons of fresh chopped parsley. Put in a separate small bowl.
Chop and fry 4 garlic cloves in a drizzle of olive oil. Add the zeste of 2 lemon, 2 sliced chili peppers and the vegetables. Mix with the pasta and some of the cooking water. Add pepper, salt and the juice of 1 lemon.
Serve with the fried breadcrumb, grated parmigiano mixed with pecorino, fresh parsley and lemon wedges. 😍
