Meat balls, cherry tomatoes and flat round pasta to finish a rainy day.
Our garden is surrounded by an eatable bay leaf hedge. The rain is more than welcome.
For 2p mix 300 grams of minced meat ( 2/3 chicken and 1/3 sausage meat) with 1 table spoon of fresh parsley and few chopped mint leaves, 1 chopped garlic clove, 1 teaspoon of mixed chicken herbs, 2 teaspoons of chopped raisins and 1 table spoon of grinded pine nuts. Oil your hands and make small meat balls. Put the meatballs in an oiled oven dish and bake in the oven at 180° for 20 mins. Turn the balls. Add 1 can of cherry tomatoes, 1 refill with water, 1 sliced red onion, 3 chopped garlic cloves, 2 bay leaves, 1 table spoon of red wine vinegar, 1 chili and 120 grams of unboiled round shaped pasta in the oven dish. Cover an put back in the oven at 180° for 30 mins. Stir halfway.
Serve with pecorino and fresh herbs. Tasty hedge😋.
