Green cabbage in layers

Green cabbage is healthy, cheap and rich of possibilities.

For 2p one cabbage is often too much. After steaming the leaves you can easily store a few leaves in the freezer for another occasion. Use the big leaves for this recipe.

Drain the leaves after steaming.

Chop and fry 1 onion, 4 garlic cloves in a drizzle of olive oil. Add 250 grams of minced chicken meat. Bake. Add 1 can of passata and 2 teaspoons of dried thyme. Allow to simmer for approx 20 mins. Taste, add pepper and salt.

Boil 120 grams of spelt mixed with lentils until al dente. Mix the sauce with the spelt/lentils.

Cover a small spring form with baking paper. Start with a layer of cabbage. Spread some tomato sauce and some grated pecorino, repeat. Finish with 1 sliced mozzarella. Bake in the oven at 180° for approx 40 mins. Serve and enjoy.
