We only have a small freezer. I’m not that kind of person who prepares tons of food in advance to save me time during the week, and I usually tend to forget the frozen meals. Fish, home made stocks and curry pastes are the only turists in the freezer (and in summer also ice cream ;-)).
Buy fresh fish, eat it or freeze it!
Slice 800 grams of courgettes with a potato peeler. Put in an oven dish. Mix with 4 chopped garlic cloves, pepper, salt, 1 table spoon of chopped fresh mint and a good drizzle of olive oil.
Defrost 2 small whole fishes (salm, bream, trout). Make a large incision in the belly, remove the intestins. Rinse and dry. Mix the zeste of 1 lime, 1 teaspoon of spicy paprika powder, ½ teaspoon of coriander seeds and some salt in a mortar. Mix the mixture with 1 table spoon of olive oil. Make a few superficial incisions at both sides of each fish. Brush on each side of the fishes. Slice the lime and put the slices in the bellies. Put the fish on baking paper on a tray.
Preheat the oven at 180-200°. Put the courgettes at the bottom position and the fish at the top position in the oven. Bake for approx 20 mins. Stir the courgettes halfway.
Remove the seeds from a pomegranate. Mix the seeds with the courgettes. Tasty, easy, colorful and healthy.
