A quick version of ragù bolognese is possible

The traditional version of ragù is time consuming( 2-3hours) but incredible delicious. This version is not bad and is finished after 30 mins.

Chop and fry 1 stem of white celery, 1 carrot, 4 garlic cloves and 1 red onion in a drizzle of olive oil . Add 300 grams of minced meat (remember my ideal combination = minced chicken and Italian sausage meat) and 1 table spoon of dried oregano. Add 1 star anise and 1 teaspoon of old apple vinegar. Add 1 can of cherry tomatoes and a small can of tomato puree. Stir now and again.

Boil some pasta.

Serve pasta and sauce with spicy oil and grated parmigiano cheese.

PS the sauce is always better the following day
