Italians are proud of their local products and often those products have a high season and a celebration weekend. Certaldo is famous for their onions and they are indeed awesome. The outside is red, the inside is white and the flavor is awesome.
Inspired by delicious.nl I use them in a tortilla.
For 2p slice and fry 2 large fresh onions in a drizzle of olive oil. Add 4 chopped garlic cloves and 1 chopped chili pepper. Add 400 grams of potato cubes, 1 table spoon of dried thyme, pepper, salt and a few spoons of water. Close the pan and allow to simmer for 10-15 mins. Stir now and again. Add some ready made sliced grilled bell pepper and 4 battered eggs. Taste and add pepper and salt if necessary.
Put the pan in the oven at 180° to become firm (approx 20 mins). Serve with arugula salad and enjoy a delicious vegetarian dish!
