Gerda and Herman arrive tonight, after a long direct drive from Belgium. My ingredients for a quick and healthy pasta are waiting for their arrival.
Boil 500 grams of fresh pasta (pici of course) together with 1 kilo of fresh green asparagus and 250 grams of frozen peas in salted water until al dente. Chop and fry 6 garlic cloves in some oil. Add 200 grams of baby spinach. Drain the pasta and vegetables and mix everything together. Finish with pepper, salt, 200 grams of ricotta and a mixture of chopped mint and zeste of 1 lemon. Grated parmigiano is optional.
