Eating cake for breakfast is not really what I would do, but in countries such as Italy or Spain it’s very common. They rarely eat breakfast at home. A few coffees, a croissant or some cake is a classical breakfast. I have my ‘healthy’ ideas about that habit, but a piece of cake in the afternoon with coffee or tea can be a mindful moment.
For a large cake of 28 cm diameter melt 120 grams of butter. Mix with 220 grams of sugar, 3 eggs and 250 grams of ricotta. Add 320 grams of self raising flour (through a seef). Chop 2 apples in cubes and mix with some lemon juice. Mix with the dough. Pour the dough in a springform covered with baking paper. Finish with 2 sliced apples. Bake in the oven at 175-180° for approx 1h. Enjoy la merienda wherever you are in this world. Happy Sunday afternoon!
