Pappa al pomodoro is a popular dish in Italy, it’s cheap and easy and a perfect way to use old bread and you can even serve it as dinner. To intensify the flavors, prepare the pappa a day in advance. Fry and chop 2 red onions and 4 garlic cloves. Add a few stems of fresh rosemary. Add 2 cans of cherry tomatoes and the same amount of water and some chili flakes. Allow the soup to boil. Add 200 grams of old bread in smaller pieces. Turn the fire low and cook for approx 20-30 mins. Store the soup cold. Reheat the soup, add pepper and salt. Serve with good olive oil and grated pecorino. Perfect lunch or light dinner.
PS next time I will use less bread, real broth and probably more olive oil to intensify the taste.
We have a B&B, so on occasions we have quite a bit of left overs of bread! In Belgium, we usually use this to make as we call “bread pudding”, wich is sort of a sweet heavy cake, so i was really pleased with this (more healthy) lunch/dinner alternative! Thanks!
