My love for squash is boundless ;-)

For 2p mix 600 grams of pre-baked ( in the oven on baking paper with a drizzle of olive oil)  butternut cubes with  50 grams of oatmeal, 1 drained can of chickpeas, 2 garlic cloves, 1 spicy little pepper, ½ teaspoon of paprika powder and 1 table spoon of dried basil in the blender. Add 1 egg and 2 chopped spring onions. Mix with a fork. Taste, add pepper and salt. Put some olive oil on your hands and make cookies of 7/8 cm. Put them on baking paper. Bake them in a hot oven at 220° for approx 30 mins. Turn halfway.

In the meanwhile, make a simple gaucamole with 1 avocado, lime juice, pepper and salt. Remember the home made mayonnaise (cfr blogpost Movie food : timbale with potatoes, leek and anchovies) I made a few days ago? Take 4 table spoons, add 1 chopped garlic clove and a pinch of smoked paprika powder.

Serve the pumpkin cookies on a green salad with the gaucamole and finish with the dressing.
