The South African  recipe, Bobotie, has probably a lot of variations, but surely a lovely list of ingredients. Above all it’s a superb dish to prepare in advance and to serve with a simple green salad. For 3p fry 1 red chopped onion, 4 chopped garlic cloves, 1 table spoon of curry powder, 1 teaspoon of turmeric and 600 grams of mixed minced meat (my choice, pork and chicken) in a drizzle of olive oil. Add 2 table spoons of apricot marmelade and 100 ml of passata. Mix with 3 table spoons of raisins marinated in some marsala (because I live in Italy!, some port is the alternative). Put all this in a rectangular oven dish. Finish with a top layer of a mixture of 2 eggs, 3 table spoons of chopped fresh parsley, a pinch of sugar and the marsala marinade. Bake au bain-marie (in another oven dish filled with water) at 180° for 40 mins (cover the dish the first 20 mins to avoid burning). Serve with a green salad.
