An oven, an oven tray and baking paper cannot be missed anymore in the daily kitchen to avoid burning ;-), to save extra kcal by reducing oil or butter, and often to intensify the taste of lots of vegetables.
Marinate 250 grams of chicken filet in juice of ½ lemon, 2 chopped garlic cloves, a drizzle of olive oil and 1 table spoon of curry powder. Store in the fridge.
Chop 1 eggplant in cubes of 3 cm. Put on the baking sheet and add a drizzle of olive oil. Bake in the oven at 180° for 20 mins and stir halfway. After 20 mins add a rougly chopped bell pepper, 2 courgettes, a few mushrooms, chopped garlic cloves, 1 chilly pepper, 1 chopped red onion and 1 table spoon of dried basil. Bake for another 30 mins, and stir now and again.
Bake the chicken until crispy.
Add chicken to the baking tray and serve with a lot of fresh basil.
