It has been a while since we had a tajine, no?

Buy a good quality chicken and divide it into different parts. For 2p, make your choice and put the other parts in the freezer for a later occasion.

Marinate the chicken in a mixture of 2 chopped garlic cloves, 1 chopped spicy little pepper, 2 teaspoons of turmeric, 2 teaspoons of ginger powder, 2 table spoons of ras el hanout, a pinch of saffron,  ¼ teaspoon of salt and 50ml of water. Store in the fridge.

Chop 1 fennel in smaller pieces. Fry 1 red onion and 2 chopped garlic cloves in a tajine in a drizzle of olive oil. Add the chicken, the marinate, the fennel and 200 ml of water. Put in the oven at 180° covered, or continue on the direct fire but use a flame distributor.

Add the skin of a pickled lemon and 400 grams of green beans after 40 mins. Cover and continue the cooking process for another 30 mins.

Serve with or without couscous or bread. Tasty, low fat, just an attractive dish in every season.
