Calamari, breadcrumb, garlic, lemon, tomato…the smell of summer!
For 2 p clean 500 grams of fresh squid. Fry 1 chopped spicy pepper, 6 chopped garlic cloves and 2 handful of old breadcrumb in a good drizzle of olive oil. Add pepper and salt. Bake until crispy and golden brown. Put the mixture on kitchen paper to remove most of the fat.
Clean the pan. Add another drizzle of olive oil and bake the squid and the slices of ½ lemon on a high fire. Turn halfway. Serve hot with the ‘pangrattato’ and fresh parsley. Delicious with rocket salad and hasselback potatoes. Lovely summer recipe!
