In love with fregola!

For 2p cut a fennel. Do you know that the female (with the real hips) fennel has  a sweeter taste than the male (longer shaped and slim hips)? No idea whether there are also ‘in-betweens’ with the most delicate taste???

Anyway, chop a female fennel, 1 onion, 4 garlic cloves and 1 spicy little pepper. Put everything in a tajine together with some whole cherry tomatoes (250 grams approx). Cover the tajine and bake in the oven at 180°. Clean the fish -a dorade or seabream- of approx 600-700 grams. Remove the intestines and fill will some fresh basil and some lemon. Add some salt and pepper.

In the meanwhile cook the fregola (same portion as you would use for pasta, or rice). After +/- 40 mins put the fish on top of the vegatables and bake for another 20 mins (check if the fish is ready and uncover the last 5 mins).

Mix the fregola with the vegetables, and add some fresh basil, pepper and salt. Serve!
