Something traditional today , chicken, mushroom-green pepper sauce and baked potatoes.
I usually buy a big chicken, so that I can decide how to use the different parts. Usually the legs are ideal to bake in the oven, the chicken breast makes another portion for 2. The bones and the rest of the meat are perfect to prepare a broth which I will keep in the freezer.
Heat the oven at 180°. Season the chicken legs with a mixture of chicken herbs. Halve 400 grams of small new potatoes. Add 1 chopped small onion, and 4 chopped garlic gloves. Add a drizzle of olive oil and some fresh rosemary. Bake in the oven for approx 1 hour.
Chop 1 shallot and 1 garlic glove in tiny little pieces. Fry in some butter. Add 500 of mushrooms and 1 table spoon of green pepper balls. Bake. Add 1 cup of the chicken broth, pepper and salt. Add 100 ml of soya cream.
