Find 1 untreated lemon, a real one with thick skin (Amalfis are superb). Remove the ends and cut in 4 slices of 1 ½ cm. Remove the lemon meat. If you buy the lemon try to add some leaves of the lemon, they give extra taste. Put the slices on baking paper (and/or on the leaf). Put 1 slice of mozzarella in each lemon circle. Add 1 semi-dried tomato and 1 pickled anchovy. Add pepper. Put in the oven at 180° or even under the grill, until the cheese turns light golden. Serve with a fresh basil leaf.
