An oven dish, 750 grams of mixed cherry tomatoes, 2 fish fillets, a bit of garlic and spring onion, some dried basil and oregano, some fresh basil, and farro…Cooking can be easy, really.
Take a round oven dish. Chop 2 spring onions, 3 garlic cloves and 1 spicy little pepper. Put in the oven dish. Add the washed cherry tomatoes (different colors are prettier) and some olive oil. Bake in the oven at 180° for 20 mins. Stir now and again.
Wash 120 grams of farro. When the water is cooking add some fresh borlotti beans (not really necessary, but I wanted to try them out). Cook for 15-20 mins. Drain.
Mix farro and tomatoes. Put two thin fish fillets on top and bake for another 10 mins at 160°.
Finish with some fresh basil.
