Because of the early start of spring we long for another kind of food. Today we will serve a beautiful green dish with fish.
Cut a green cauliflower in little roses and put them in a large oven dish. Add 2 tablespoon of chopped fresh herbs (rosemary, parsley, thyme), 1 chopped garlic glove, 1 tablespoon of olive oil, pepper and salt. Roast for 20-30 mins in the oven at 180-200° until al dente. Add 1 courgette, chopped in slices of 5mm, after the first 10 mins.
Cut a fillet of cod (400 grams for 2) in pieces of 3 cm. Add 1 tablespoon of olive oil, 1/2 tablespoon of the same chopped fresh herbs, salt and pepper. Put on top of the stirred vegetables in the oven for the last 10 mins.
Blanch a cup of fresh peas. Make a dressing with 2 tablespoons of lemon juice, 1 table spoon of syrop of pomegranate, 1 tablespoon of good olive oil, some pepper and salt.
When everything is done, mix together (be gentle with the fish) and add 2 tablespoons of seeds of a pomegranate for the color.
