Lovely Sunday tomates crevettes

Days are getting longer. Birds are singing differently. Lovely day to discover the countryside. Tonight we will have a Belgian menu. French fries and ‘tomates crevettes’ with home made mayonnaise.

Start by making the mayonnaise. The most important thing to remember is that all ingredients have to been at room temperature. Put 1 egg, 1 tablespoon of mustard,  1 tablespoon of lemon juice or a tasty vinegar (or a combination) and a little bit of salt in a high recipient (ideal for using the electric mixer). Start the mixer and add very slowly the oil (I prefer sunflower, mais or peanut) until you get the right consistency. Add pepper and salt by taste. This base can be used for any kind of variation with fresh herbs, garlic, …. Choose beautiful tomatoes (2 for each) which you empty (I will use the inside of the tomatoes for a simple tomato sauce tomorrow). Put a little bit of salt in the tomatoes and put them upside down on a kitchen paper (to lose water) for at least one hour. Mix 250 grams of crevettes (optional king crab) 1-2 tablespoons of mayonnaise, ½ teaspoon of worcestershire sauce, pepper and salt. Try to fill the tomatoes shortly before serving time. I hate the after- smell of a fryer so I prefer to bake the fries outside, or go for oven or Airfryer baked fries. Remember: lazy Sunday, so deep frozen fries are perfect. Add a bit of green  salad for the color. This is really simpel and delicious!
