Tonight I will have a intimate dinner with myself. Make a basic tomato sauce. Chop 1 red onion, 2 garlic cloves, 1 small spicy pepper. Fry in 1 table spoon of olive oil. Add the pieces of the tomato from yesterday and some extra cherry tomatoes cut in halves to have approx. 350 grams of tomato. Add 1 table spoon of dry basil. Stir regularly. Add a pinch of sugar (works really well to balance the sourness of the tomato) and some salt. Meatballs and tomato sauce, a wonderful children’s menu, why not J. I will never prepare meatballs for just 1 or 2 persons, in stead I make an amount and freeze them in several portions. You can prepare the meatballs in different styles, with different herbs (fresh or dried herbs), chopped onion and garlic, some grated parmigiano, pine nuts, dried tomatoes, even combined with couscous or quinoa to reduce the amount of meat. Always mix the desired ingredients together before you decide to add an egg or breadcrumb to keep the meat together. I prefer to skip egg and breadcrumb if I can manage to get nice smooth balls by rolling them after I moisten my hands with some olive oil or white wine (I love this ;-)). Bake the balls in the oven at 180° in an oiled dis hand turn occasionally. Meatballs in tomato sauce will always be a success, even on a buffet. Serve them with puree, rice or pasta. You can even prepare an oven dish with the meatballs and the tomato sauce with some fresh basil and pieces of mozzarella.
