My family and friends know I am a big fan of squash, the real good stuff with lots of flavor.
Tonight’s recipe is an experiment. I had 2 little ones ( green skin and orange meat) in my storage. One showed some signs of ‘necrosis’ so I decided to bake them in the oven. Remove the seeds, and remove all necrosis and surrounding areas. Put the pieces in a large ovendish with 8 unpeeled garlic cloves, a few bay leaves and some olive oil. Cover with aluminum foil and bake for 1 1/2 h at 200°.
Cool down. Remove the skin from the pumpkin and garlic. Remove the bay leaves. I put 600 grams of the pumpkin in the freezer and use the other 600 grams for this recipe. Add 2 teaspoons of turmeric, 1 table spoon of chia seeds, 1 table spoon of oregano, some chili flakes and 250 grams of ricotta. Use a fork to smash and mix everything. Taste, add pepper and salt. Spread in a round low oven dish covered with baking paper. Set aside until dinner time.
Brush some olive oil on the pumkin. Preheat the oven at 200 °. Bake for 15 minutes. Spread thin slices of a tomato on the ‘pizza’. Spread 100 grams of smoked salmon. Finish with 100 grams of crumbled feta.

Bake for 20 minutes. Serve with green salad.
