Nduja….sorry, not vegetarian, but sooo delicious

The first time I bought nduja for a recipe ( I remember it was a Jamie Oliver’s), I didn’t even check the ingredients, but I immediately loved the flavor of it. Even my wife, Iris, a real vegetarian ( I’m still a flexitarian), didn’t complain. I discovered much later that it’s NOT vegetarian, and Iris agreed that I could keep using it on an occasional basis.

Since then nduja is always available in my stock.

For this recipe you need 1/2 of a container of nduja, 250 grams of cherry tomatoes, 1 red onion, 4 garlic cloves, 1 portion of ready made tomato sauce, 250 grams of kale ( netto weight after removing the stems), some grated parmesan, 40 grams of pine nuts,  fresh basil and 500 grams of ready made gnocchi.

Clean the kale. Chop in fine stripes. Parboil in salted water for approximately 5 minutes. Drain. Set aside.

Cut the cherry tomatoes in halves. Chop the onion and the garlic. Put all together in an oven dish ( for 2p). Bake in the oven at 180° for 15 minutes.  Add the gnocchi,the nduja the tomato sauce and the kale. Mix. Put back in the oven for 20-30 minutes. Stir now and again.

Spread the pine nuts at the moment of the last stir and put back in the oven for 5, max 10 minutes ( included in the total cooking time). Finish with a handful of chopped fresh basil and the grated parmesan. Serve.

So easy and …what a great flavor 😋
