Few ingredients – maximum flavor

This recipe is one of my personal favorites. I often make it, in different ways, when I’m alone in the house. It’s also a perfect campervan recipe and above all, it’s vegetarian and healthy.

For 2p you need : 700 grams of cucumber, 1 onion, 4 garlic cloves, 50 grams of pine nuts, 1 hiped table spoon of curry powder, 1 table spoon of cumin seeds, 1 table spoon of dried basil, some vegetable stock cube, 200 ml of coconut milk and basmati rice.

Put 150 grams of basmati rice in 1 1/2 amount of water. Heat the pan. Allow to boil for approximately 5 minutes. Stop the fire. Put 1 kitchen paper in between the lid and the pan. Close carefully and set aside. The rice will gradually absorb all the water and will be perfectly cooked after 15-20 minutes.

Chop and fry the onion, garlic cloves and cucumber in a drizzle of olive oil. Add all spices and the pine nuts. Stir and fry. After 5 minutes of frying, add the coconut milk and 200 ml of water. Add 1 cube of good quality vegetal stock. Allow to simmer for approximately 20 minutes. Stir regularly. Taste, season with pepper and salt if needed.

Serve all together.  Some fresh basil or coriander would make it even better.
